Grilled Vegetables - for Even the Pickiest Eater!

Vegetables taste amazing when grilled and you may find that even the pickiest eater you know will eat everything on their plate if it's grilled.  The only special equipment you need to grill veggies (other than the grill) is an inexpensive foil pan.  Chop your vegetables into even sized pieces (we've used broccoli, cauliflower, cherry tomatoes, red onions, summer squash, mushrooms, Brussel sprouts, asparagus and eggplant) drizzle with a little olive oil and place into the pan.  Set the whole pan on the grill and cook, stirring often until the vegetables are done to your liking.    The harder a vegetable is the longer it will need to cook - start those first and add in the more tender vegetables after the firm veggies soften a bit.   Season to taste and watch your hard work get devoured!
 
And don't forget about dessert from the grill - peaches and pineapple are both fabulous grilled and served with low fat ice cream or frozen yogurt. 
 
Head to the farmer's market, buy some delicious fresh fruits and veggies and get out there and grill!!  Bon Appétit!
